One of my many staples in the refrigerator IS beets. Most people think of them as not being healthy, but when compared to other vegetables, they are among the top 10 of cancer-fighting veggies. With a long, luscious green top, these tough-skinned beets have healthy properties that you might just be looking for.
A few healthy benefits and tips below, based on 1 medium beet:
* Cancer prevention
* Packed full of energy, which dilates your blood vessels & increases stamina
* Inexpensive
* Calcium, plays a major part with nerve transmission
* Magnesium, assists with enzyme functioning
* Phosphorus, also supports enzyme functioning and DNA
* Phytosterols, eliminates and lowers total cholesterol
* Prevents against heart disease and improves your overall heart health
* Try eating them for 1 week, and see how you feel
The color in beets comes from a chemical called betalains, which is good for detoxifying the blood and other bodily functions. Beets are very powerful, and I would recommend eating no more than one a day.
Many ways to eat beets:
* Boil them
* Sauté them
* Peel and eat raw
Personally, I like to juice them! I don't eat them raw because my body has a hard time digesting them in the raw state. The cellular membrane on beets is very tough, so sauteing them seems to work very good for me. Everyone is different, so experiment.
My favorite way to cook these is to sauté' both sides on medium for about 15 minutes, so they are nice and soft. You can eat them right off the skillet or wait until they are nice and cold. Don't be fooled about what research says about losing all your nutrients when cooking vegetables. This is not true at all. In fact, research shows that only a minuscule number of vitamins and minerals are lost, NOT a significant amount. It’s better to have them cooked or boiled then to not have them at all.
